Mode of Action

A microencapsulated ferric saccharate form is a patented microencapsulation system consisting of a calcium alginate matrix that holds and protects a salt of iron (III) inside. Microencapsulated ferric saccharate form is produced by ionotropic gelation of alginate with calcium, entrapping the iron salt inside. Calcium displays a stronger interaction with alginate, stabilizing the microcapsules and avoiding the release of iron. The interaction of iron with alginate is weaker, so it is released when the calcium layer is dissolved in the intestine. The main objective of this microencapsulation is to prevent iron from interacting with the environment until reaching the intestine. Iron salts are very reactive, so this protection can avoid oxidation of the food matrix and reduce side effects when the fortified product is ingested. Another classic problem of iron fortification is the unpleasant metallic taste of these products, which is completely avoided using microencapsulated iron. The acid pH in the stomach fails to destroy Microencapsulated ferric saccharate, so the iron continues encapsulated its journey until reaching its goal: the gut. It avoids heartburn or nausea, common when ingesting iron salts. After that, the basic pH and high concentration of sodium in intestinal bile salts finally erodes the capsule and releases their content. In the intestinal wall, an enzyme reduces the iron (III) of Microencapsulated ferric saccharate into iron (II), which is finally absorbed by the intestine through a divalent metal transporter protein.
